Pumpkin Cookies
sunday i made a batch of my FAVORITE cookies...this recipe makes alot--so it's best if you have some places in mind to "share" them. but i made them in anticipation of phil's visit and going home to cleveland next week. thought i would share this recipe with you--just in time for the holidays! :)
4 sticks - margarine
3 C- white sugar
4 eggs
2 C- pumpkin
2 t –vanilla
5C –flour
2 t – baking powder
2 t – baking soda
½ t – salt (less if desired)
1 ½ t- cinnamon
¼ t – nutmeg
¼ t- cloves
1 C –raisins or nuts (OPTIONAL)
Sift dry ingredients together (all except sugar). Beat margarine & sugar until fluffy. Add remaining ingredients. Put about a large spoonful size on cookie tray & Bake 350 for 12 min.
*makes about 70-75 cookies
Frosting
10 T –Margarine
6 C- Powdered Sugar
6 T- Evaporated Milk *(you can substitute w/ fat free version)
2 ½ t – Vanilla
Beat margarine and add rest of ingredients. May have to add more evap milk for spreading consistency.
Spread on COOLED cookies and keep refridgerated until they are all gone!!
